With over 25 years of experience in hospitality, Ollie is a largely self-taught chef who views food as an art form, complemented by formal training at the Catering School in Brockenhurst. Time spent living near Barcelona further refined his culinary skills, along with experience at Marriott Hotels and Galeries Lafayette in Dubai. His passion lies in crafting exceptional dining experiences for private events, weddings, and bespoke occasions.
With over 20 years of experience in hospitality, Nikki has led multiple new openings across boutique hotels, country pubs, and premium brands such as Soho House and Artist Residence. A natural team builder and standards champion, she is passionate about creating memorable guest experiences and developing places that people truly love.
