With over 20 years of experience in hospitality, Nikki has led multiple new openings across boutique hotels, country pubs, and premium brands such as Soho House and Artist Residence. A natural team builder and standards champion, she is passionate about creating memorable guest experiences and developing places that people truly love.

Giles Hester

Head Chef

Our Head Chef, Giles, has over 25 years of culinary experience spanning a wide range of restaurants. Trained in classic French cuisine, he also earned his catering qualifications at Southampton Technical College. He has owned several successful establishments, including Hanks Bistro and The Corner House in Bude, Cornwall. Following his time in Cornwall, he went on to serve as Head Chef at Bistro La Place and later The Bugle in Twyford, holding each position for seven years.
